Ingredients include 2kg pumpkin, 150gm feta style goats cheese, 200gm of rocket, 1 capsicum and 1 red onion.

2 kilos Japanese pumpkin ,
150gm LOCAL GOAT feta style cheese,
200gm of LLL rocket,
1 capsicum and 1 red onion.
Slice pumpkin and drizzle with olive oil. Roast in the oven at 180 deg until soft and slightly browned.
Arrange on a plate with rocket, sliced capsicum and red onion. Crumble the feta on top and lightly toss.
Add some fresh local olive oil or agrumato to dress.
